Delicious Carrot Hummus

I love hummus and I almost always have some in the fridge. You can always combine the basic recipe with new tastes and thus not only have a great dip, but also an ideal dressing for salads to go. Unlike classic dressings, you can simply add the hummus to the salad box and then mix it when you are ready to eat. Hummus fits as a snack, dressing, dip or side dish and is made quick and easy.

Carrot Hummus

Ingredients

Carrot Hummus
  • 220 g chickpeas cooked
  • 200 g carrots
  • 2 tbsp Tahini
  • 2 garlic cloves (optional)
  • 4 tbsp olive oil
  • 3 tbsp apple vinegar 4 for carrot hummus
  • 1 tbsp parsley fresh or frozen
  • 2 tsp cilantro
  • 1 tsp cumin
  • 1 tsp salt
  • some pepper

Instructions

1. Put all ingredients into the food processor or use a hand blender to make a smooth hummus. If placed directly in a jar and put into the fridge the hummus can be used up to a week.
