Feta Salad with King Oyster Mushrooms

This is one of my absolute favorite salads. It basically consists of only three ingredients and tastes simply delicious. King oyster mushrooms are really great and are becoming more and more popular, especially in vegan cuisine, because they have a meaty consistency. They can be prepared in many different ways. The combination with crunchy baby lettuce and feta cheese gives the salad a Mediterranean touch.

Crunchy Salad with Feta and King Oyster Mushrooms

  • 300 g king oyster mushrooms
  • 100 g feta cheese
  • 2-3 baby lettuce
  • 2 spring onions
  • 20 g butter
Balsamico Dressing
  • 100 ml water
  • 2 tbsp of Aceto Balsamico
  • 2 tbsp of olive oil
  • 1 tbsp Dijon mustard
  • salt and pepper


1. Wash the salad and cut it into fine strips.
2. Dice the feta cheese and arrange it with the salad on two plates.
3. Mix all the ingredients for the dressing and put it aside.
4. Dice the mushrooms and cut the spring onion into fine slices.
5. Melt the butter in a coated pan and fry the mushrooms with the onions until they are lightly brown.
6. Serve the still warm mushrooms on the bed of lettuce and put the dressing on the salad at the table.
